Hearty Crock Pot Beef Stew
3 lbs stewing beef, cubed
¼ cup all-purpose flour
½ tsp salt
3 tbsp olive oil
3 tbsp Worchestershire sauce
8 carrots, cut into 2 inch pieces
4 large potatoes, cubed
1 ½ tsp ground black pepper
2 cups boiling water
2 – 1oz envelopes onion soup mix
3 tbsp butter or olive oil
3 onions, diced
2 tbsp minced garlic
2 cups button mushrooms, halved
½ cup warm water
2 tbsp all-purpose flour
1 large crock pot, of course!
Preparation:
Step 1: Combine the flour and salt in a large lidded container. Add the beef and shake until the beef is coated.
Step 2: Heat the olive oil in a large skillet over medium-high heat. Add the beef and flour mixture and Worchestershire sauce and cook until beef is evenly browned on all sides. Transfer to crock pot, but do not clean the skillet.
Step 3: Add the carrots, potatoes and pepper to the crock pot.
Step 4: Combine the boiling water and onion soup mix in a small bowl and add to the crock pot.
Step 5: Melt butter (or olive oil) in the skillet over medium-high heat. Cook the onion, garlic and mushrooms until soft then transfer to the crock pot.
Step 6: Set the crock pot to HIGH and cook for one hour. Reduce crock pot to LOW and cook until the beef is tender (about 6 to 8 hours).
Step 7: Combine the warm water and flour and add to the crock pot. Continue cooking uncovered in the crock pot for 15 minutes, until the stew thickens.
