Imagine a lazy Saturday waking up to the delicious aroma of apples and cinnamon. Who needs breakfast in bed when you can wake up to apple cinnamon oatmeal simmering in your crock pot?
Because this recipe uses steel-cut oats, leftovers can be refrigerated and reheated without the oats going mushy and losing their texture. Make a batch on the weekend and breakfast is served for the entire week!
Weekend Wake-up Apple Cinnamon Crock Pot Oatmeal
Non-stick cooking spray
3 cups water
1 and 3/4 cups apple juice
1 and 1/2 cups steel-cut oats.
1 apple, cored and diced
1/2 cup golden raisins (optional)
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
Topping
Brown sugar
Vanilla yogurt
Spray the inside of the crock pot with non-stick cooking spray to prevent sticking.
Combine water, apple juice, steel-cut oats, apple, raisins, salt and cinnamon in a crock pot.
Cover crock pot and cook on low for 6 to 7 hours.
Top with brown sugar (to taste) and serve with vanilla yogurt.
