Are the kids getting tired of the same old, same old grilled cheese for lunch? Turn lunch into a Cha-cha-cha Fiesta with this kid-friendly take on this favorite Mexican dish!
Simple and quick to make, these chicken quesadillas can be adjusted depending on your kids’ tastes. For a nutrition boost, try adding red peppers, or black beans.
Kid-Friendly Chicken Quesadilla
12 oz. cooked chicken breast
2/3 cup shredded Monterey jack or Cheddar Cheese
¼ cup fi nely chopped green onion
8 (8”) whole wheat or multigrain wraps
1 cup mild salsa
1 cup light sour cream
- Combine chicken and salsa in bowl. Divide chicken mixture, cheese and green onions evenly among 4
- tortillas.
- Cover with remaining tortillas. Heat tortilla stacks on grill for 2 – 3 minutes
- Turn tortilla over and repeat for another 2-3 minutes or until cheese is melted.
- Serve with sour cream and salsa
Oatmeal Raisin Cookies
1 1/2 cups brown sugar
2 eggs
1 tsp vanilla
3/4 cup soft tub non-hydrogenated margarine
1 cup whole wheat fl our
1 tsp baking soda
1/2 tsp salt
2 cups rolled oats
1/4 cup wheat germ
3/4 cup coconut
3/4 cup raisins
- Cream margarine, sugar, eggs, and vanilla.
- Combine dry ingredients except raisins and mix with creamed ingredients. Mix in raisins.
- Drop on cookie sheet and flatten with fork.
- Bake at 350F for 12 to 14 minutes.
