Good Old Chicken Fingers & Fries…just don’t tell them it’s good for them!
If you ask them, most kids would say they’d eat chicken fingers morning, noon and night. Not exactly a mom-approved diet, but what can you do? They ask for them every time and eat them without a fuss.
How about a healthy take on Chicken Fingers and Fries? We promise we won’t tell your kids that they are good for them!
Good old Chicken Fingers & Fries
½ lb (250 g) boneless skinless chicken breasts
1 small clove garlic, minced
¼ cup fi ne dry bread crumbs
1 tbsp freshly grated parmesan cheese
1 tbsp fi nely chopped fresh parsley
½ tsp paprika
¼ tsp dried oregano
Pepper
¼ cup milk
- Cut chicken into 2 ½ by ½ inch strips.
- Combine garlic, bread crumbs, cheese, parsley, paprika, oregano, and pepper to taste.
- Dip chicken into milk; roll in crumbs.
- Place in single layer on lightly greased baking sheet.
- Bake at 425F for 5 minutes; turn and bake for 2 minutes longer or until chicken is no longer pink inside.
Oatmeal Chipit Cookies
1 ¾ cup whole wheat flour
½ cup coconut
2 cups rolled oats
1 cup butter or non-hydrogenated margarine
1 cup brown sugar
1 tsp baking soda dissolved in ¼ cup boiling water
1 tsp vanilla
½ tsp salt
6 oz. Chocolate chips
- Cream butter/margarine and sugar. Add water and baking soda mixture. Add vanilla.
- Add flour, coconut, rolled oats, salt.
- Add chocolate chips
- Bake 350F for 12-15 minutes
