Let’s face it – if you’re a kid, the urge to eat with your little fingers is irresistible. Who can blame them? Squishing food with your fingers is kinda fun!
So as the saying goes: If you can’t beat ‘em, join ‘em and make a meal out of finger foods! You can get all the major food groups on a stick. Try the combinations below or create your own!
Finger Food – Kabobs
Two fruit kabobs with pineapple, melon, grapes, cantaloupe and strawberries (or any seasonal fruit);
Two cheese and cherry tomato kabobs
Two with ham or turkey deli slices rolled.
Two mini bran muffins.
Mini Bran Muffins
1 ½ cups bran
¾ cup whole wheat or barley fl our
1 tsp baking soda
¼ tsp baking powder
1 egg
¾ cup packed brown sugar
¼ cup oil
1 cup buttermilk/sour milk (to sour milk add 1 tbsp vinegar to milk)
2 tbsp. molasses
½ cup raisins (optional)
½ cup dried apricots diced into small pieces (optional)
1. Beat egg, brown sugar, oil, buttermilk, molasses, raisins, apricots. Add bran, fl our, baking soda, baking
powder. Stir just until moistened.
2. Bake at 375F for 18-23 minutes for 12 regular muffi ns (time and temperature need to be adjusted if making mini muffins)
