So, so simple to make. Salmon, mayo, parsley, celery, some whole wheat tortillas and you’re there!
Combine these tasty rollups with some zucchini sticks, dip and yogurt parfait and you’ve got a terrific meal that will satisfy both you and the kids–and get them back outside playing in no time flat!
Sensational Salmon Salad Rollups!
Whole Wheat Tortillas
Salmon Salad
1 tin drained salmon
2 tablespoons mayonnaise
1 tbsp parsley, chopped
½ cup celery, fi nely chopped
To make the salmon salad, combine 1 tin drained salmon with 2 tablespoons mayonnaise, 1 tablespoon chopped
parsley and ½ cup fi nely chopped celery.
Place pita on cutting board, spread about ½ cup salmon salad in lower third of pita. Pick up bottom edge of pita
and roll up. Wrap in plastic.
Berry Yogurt Parfait
½ cup Vanilla fl avored reduced fat yogurt
½ cup Frozen/fresh berries such as strawberries, blueberries, raspberries
¼ cup coconut
1. Place ¼ cup yogurt in a small parfait cup then ¼ cup berries, then ¼ cup yogurt then ¼ cup berries. Top with
coconut.
