How do you survive entrepreneurial motherhood and still manage to serve up healthy, home-cooked meals that your grandmother would be proud of? Easy: with a well-stocked pantry, a few key ingredients and a secret stash of ridiculously easy recipes to turn to in a pinch.
Homemade doesn’t mean you can’t shorten the preparation time and substitute frozen or premade ingredients for the real deal.
This week our ridiculously easy Dinner Dash recipes focus on soup and salads!
Homemade Chicken Noodle Soup
4 cups Chicken Stock
1 cups of Medium Egg Noodles
3 carrots, peeled and chopped
1 cup of frozen peas
1 cup of frozen corn
Soy Sauce, to taste
Worchestershire Sauce, to taste
Green onion, chopped
Bring chicken stock to a boil and add carrots and cover for 10 minutes. Add egg noodles, green onions, frozen peas and corn and cook until noodles are tender. Season with soy sauce and worchestershire sauce to taste.
World’s Easiest Yummiest Pumpkin Soup
(ps Pumpkin is this year’s super-vegetable!)
1 26 oz (796 mL) can of pumpkin smoosh (unsweetened pureed pumpkin)
1 10 oz (284 mL) tin of chicken broth (low sodium if you can!)
1 pint (500 mL) light cream
(*add milk to further thin out soup if necessary–soup shouldn’t be too thin though!)
1 clove garlic very finely chopped
1/4 onion very very finely chopped
1 tsp. Butter
salt and pepper to taste
grated parmesan cheese
In bottom of sturdy pot (big enough to make soup for 4) heat butter, put in chopped garlic and onion and fry till browny-clear. Add pumpkin smoosh, chicken broth, cream (milk if necessary*) and stir until heated thoroughly. Put in lovely little bowls, sprinkle parmesan on top (if you like parmesan!) and serve. Salt and pepper to taste.
Crunchy Broccoli Grape Salad
Seedless red grapes
Small red onion, diced
Cut up broccoli, halve grapes, and dice red onion. Toss together with your favorite salad dressing and sprinkle with toasted almonds.
Delicious Fancy-Pants Salad
1 Bag of mixed spring greens
1/2 small can of mandarin slices (you can substitute 10 strawberries chopped in quarters)
1 green onion chopped small (green part too!)
1 handful of walnuts or almonds or pecans
1 handful of plain croutons
Throw all into a bowl and toss
Note: This salad will make a nice civilized serving for 4. Just expand ingredients to expand servings!
1 half cup of balsamic vinegar
1 flat tsp. brown sugar
1 pinch of dried ginger or very small piece of fresh ginger grated or chopped in
Heat in microwave for 1 minute then stir to blend brown sugar into liquid
drizzle over tossed salad and serve!
