Pressed for time at the end of a busy day? This family-pleasing easy-peasy fish dish can be whipped up in no time flat! You can also vary this recipe by adding chopped tomatoes, onions, salsa, cheese, or mushrooms on top of the sauce during the last 10 minutes of cooking. The creamy pesto sauce also makes a great dipping sauce on its own for fish fingers.
Presto Creamy Pesto Fish
Ingredients
4 frozen fish fillets (haddock, basa, tilapia)
½ cup mayonnaise
3 tbsp Pesto
Directions
Cook fish according to package directions.
During last 10 minutes of cooking, remove fish from oven and spread the creamy pesto sauce on each fillet.
Return to oven and cook for the remaining 10 minutes. Serve with brown rice and veggies for even more nutritional wallop!
