A coworker handed this to me saying, “My kids love this curry chicken” like he was handing me the Holy Grail of cooking (and since I wasn’t a mother at the time, I smiled and nodded). Fast forward to life with a 6-year-old picky eater who doesn’t even like ketsup and imagine my surprise when she too liked it – curry! Now I get it!
Mommy’s Dead Tired Dead-Easy Curry Chicken
3 pounds chicken pieces
1/2 cup butter, melted
1/3 cup honey
4 teaspoon mild curry powder
2 teaspoon Dijon mustard (not the grainy kind)
Pinch of cayenne pepper
Mix the butter, honey, curry powder, Dijon mustard, and cayenne over medium heat until melted.
Pour over chicken pieces and bake at 325 F for 45 minutes in a covered dish. Turn chicken after 25 minutes.
Serve over rice.
